Zucchiniblüten Suppe

Ingredients for 20 persons / Zutaten für 20 Personen

  • 6 l   vegetable broth / Gemüsebrühe
  • 125 g   butter / Butter
  • 60 ml   olive oil / Olivenöl
  • 5   onions, chopped / Zwiebeln, gehackt
  • 5   carrots, chopped / Karotten, gehackt
  • 5   celery sticks, chopped / Selleriestangen, gehackt
  • 3000 g   zucchini, diced / Zucchini, grob gewürfelt
  • 1000 g   zucchini flowers, cut in stripes / Zucchiniblüten, in Streifen geschnitten
  • 500 g   basmati rice / Basmati-Reis
  • salt, pepper / Salz, Pfeffer
  • parmesan, fresh grated for serving / Parmesan, frisch gerieben fürs Servieren

Making

Cook the rice separately, not too soft. Heat butter and oil in a large pot, add onions, carrots, celery and sauté 10 minutes at low temperature. Add zucchini and zucchini flowers and cook for another 2 minute. Add the hot broth, add rice, season with salt and pepper and heat again. Serve sprinkled with Parmesan cheese.
