Tomaten Suppe

Cream of tomato soup / Tomatencremesuppe / Crema di zuppa di pomodoro

Ingredients for 20 persons / Zutaten für 20 Personen

  • 125 g   butter / Butter
  • 5   onions, cut in thin rings / Zwiebeln, in dünne Ringe geschnitten
  • 5000 g   plum tomatoes, peeled / Eiertomaten, geschält
  • 1000 g   potatoes / Kartoffeln
  • 4,5 l   water / Wasser
  • cream / Sahne
  • salt, pepper / Salz, Pfeffer
  • Parmesan
  • 20   slices of bread, diced, roasted / Scheiben Brot, gewürfelt, geröstet

Making

Sauté the onions in the butter until translucent. Add the tomatoes and sauté 15 minutes together. Season with salt and pepper. Add water and potatoes and bring to a boil. Simmer for 1 hour. Mix fine with a hand blender. Add the cream and serve with the roasted bread.
