Spargel Suppe

asparagus soup / Spargelcremesuppe / zuppa di asparagi

Ingredients for 20 persons / Zutaten für 20 Personen

  • 3000 g   green asparagus / Grüner Spargel
  • 250 g   butter / Butter
  • 5   onions, cut into thin rings / Zwiebeln, in dünne Ringe geschnitten
  • 100 g   flour/ Mehl (gluten free: 50 g potato or corn starch / glutenfrei: 50 g Kartoffel- oder Maisstärke)
  • 500 ml   white wine / Weißwein
  • 7 l   vegetable broth / Gemüsebrühe
  • cream / Sahne
  • salt, pepper / Salz, Pfeffer

Making

Cut the asparagus tips and set aside, cut the bars into small pieces. Melt the butter in a pot and fry the onions until translucent. Add the asparagus and cook for 5 minutes. Dust with the flour and stir well, then add the wine and broth. Season with salt and pepper and simmer for 30 minutes. Puree with a hand blender. Separately bring 1 1/2 liters of water to a boil and cook the asparagus heads 2 minutes in it. Stir the cream into the soup. Drain the asparagus heads and add it to the soup.
