Steinpilz Crostini

Ingredients for 20 person / Zutaten für 20 Personen

  • 1200 g   porcini / Steinpilze
  • 150 ml   olive oil / Olivenöl
  • 5   cloves of garlic / Knoblauchzehen
  • fresh majoran, chopped / frischer Majoran, gehackt
  • 350 ml   vegetable broth / Gemüsebrühe
  • 100 g   capers / Kapern
  • 4 EL   parsley, chopped / Petersilie, gehackt
  • 60   small slices bread, slightly roastet / kleine Brotscheiben, leicht geröstet
  • salt, pepper / Salz, Pfeffer

Making

Sauté the mushrooms with marjoram and garlic in olive oil over medium heat. Add the broth little by little. Add capers and parsley and season with salt and pepper. Simmer at higher heat until the decoction is evaporated. Serve on lightly toasted bread.
