Kartoffel Suppe

potato soup / Kartoffelsuppe / zuppa di patate

Ingredients for 20 persons / Zutaten für 20 Personen

  • 2500 g    potatoes / Kartoffeln
  • 15    onions / Zwiebeln
  • 700 g    carrots / Karotten
  • 400 g    celery / Sellerie
  • 8 l    vegetable broth / Gemüsebrühe
  • 7 TL    Majoran
  • nutmeg / Muskatnuss
  • salt / Salz
  • pepper / Pfeffer
  • 10 EL    chopped parsley / gehackte Petersilie

  • 700 g bacon / Speck

Making

Onions, potatoes, vegetables and bacon cut into cubes. Fry bacon. Add onions and fry until soft. Add vegetables and potatoes and sauté. Add vegetable broth and bring to a boil. Flavor with marjoram, nutmeg, salt and pepper. Cook for about 30 minutes. If you like mix finely or leaf it like this. Sprinkle with parsley and serve.
