Hülsenfrüchte Suppe

Cream soup of legumes / Cremesuppe aus Hülsenfrüchten / crema di legumi

Ingredients for 20 persons / Zutaten für 20 Personen

  • 1500 g   legumes / Hülsenfrüchte(e.g. beans, lentils, peas / z.B. Bohnen, Linsen, Erbsen)
  • 5   carrots / Karotten
  • 5   onions / Zwiebeln
  • 400 g   celery / Sellerie
  • 10   potatoes, sliced / Kartoffeln, in Scheiben
  • cream / Sahne
  • Parmesan
  • salt, pepper / Salz, Pfeffer

Making

Soak the legumes overnight in cold water and drain before cooking.

Put the legumes with carrots, celery, onions and potatoes in a pot, cover with water and bring to a boil. Reduce heat and cook soft. Mix fine with a hand blender. Add the cream and mix again. Season with salt and pepper and serve with grated parmesan.
