Grapefruit Crostini

 

Ingredients for 20 person / Zutaten für 20 Personen

  • 60 g   butter / Butter
  • 500 ml   juice of fresh grapefruits / Saft von frischen Pampelmusen
  • 100 g   Gruyère cheese, grated / Gruyère Käse, gerieben
  • 600 g   young gouda, grated / junger Gouda, gerieben
  • 125 ml   cream / Sahne
  • 5   egg yolks, swirled / Eigelb, verquirlt
  • 60   small slices bread, slightly roastet / kleine Brotscheiben, leicht geröstet
  • salt, pepper / Salz, Pfeffer

Making

Oven 180 °C. Pour the grapefruit juice in a small saucepan. Add butter, Gruyere and Goud. Stir in the cream. Heat at low heat while stirring for 10 minutes. Remove the pan from the fire to mix in the egg yolk. Stir at low heat until smooth, but do not let boil! Place the bread slices on a greased baking sheet and brush with the mixture. Bake for a few minutes until light brown. Serve hot.
