Tomaten Mousse

Ingredients for 20 persons / Zutaten für 20 Personen

  • 30   ripe tomatoes, peeled, cored / reife Tomaten, geschält, entkernt
  • 50 g   chives, chopped / Schnittlauch, gehackt
  • 4   cloves of garlic / Knoblauchzehen
  • 400 g   mayonnaise / Mayonnaise
  • 500 g   yogurt, nature / Naturjoghurt
  • 300 ml   cream / Sahne
  • salt, pepper / Salz, Pfeffer
  • fresh basil leaves for decoration / frische Basilikumblätter zum Dekorieren

Making

Tomatoes, peeled: With a small knife cut out fruit set of tomatoes. Cut tomato skin on the top crosswise. Put tomatoes for a few seconds in boiling water. Once the skin curls, it is easy to remove it. Cool tomatoes in ice water, drain and remove skin.

Let the tomatoes drain. Then puree with a hand blender. Mix in a large bowl with garlic and chives. Carefullystir in first the mayonnaise, then the yogurt and finally the cream. Season with salt and pepper. Fill in bowls and store in a cool place. Serve garnished with basil leaves.
