Auberginen Crostini

Ingredients for 20 person / Zutaten für 20 Personen

  • 1000 g   aubergines, sliced / Auberginen, in Scheiben geschnitten
  • 400 g   black dried olives, cored, chopped / schwarze, getrocknete Oliven, entkernt, gehackt
  • 150 ml   olive oil / Olivenöl
  • 5   cloves of garlic / Knoblauchzehen
  • fresh oregano, chopped / frischer Oregano, gehackt
  • 400 g   tomatoes, cored, diced / Tomaten, entkernt, gewürfelt
  • 60   small slices bread, slightly roastet / kleine Brotscheiben, leicht geröstet
  • salt, pepper / Salz, Pfeffer

Making

Sauté the aubergines with oregano and garlic in olive oil over light heat until smooth. Add tomatoes and season with salt and pepper. Simmer at low heat for 5 minutes until the decoction is evaporated. Serve on slightly toasted bread.
