Artischocken Suppe

Ingredients for 20 persons / Zutaten für 20 Personen

  • 150ml   Zitronensaft
  • 30   big artichokes / gr. Artischocken
  • 250 g   butter / Butter
  • 5   onions / Zwiebeln
  • 300 g   celery / Sellerie
  • 1000 g   potatoes / Kartoffeln
  • 8 l   vegetable broth / Gemüsebrühe
  • 5   egg yolks
  • salt, pepper / Salz, Pfeffer
  • Parmesan

Making

Prepare the artichokes: Break the stems, cut the leaves and remove the hay. Half fill a bowl with water and stir in the lemon juice. Place the artichokes in the lemon water. Sauté onion and celery in 2/3 of the butter for 5 minutes in the pot. Drain artichoke hearts and sauté along with the diced potatoes for another 5 minutes. Pour in the broth, season with salt and Pepper, cover and simmer 40 minutes. Puree with the hand blender. Mix the egg yolks with the remaining butter. Remove the soup from the heat and bind with the egg yolk mixture. Serve with Parmesan cheese.
