Calculate 2 big artichokes per person.
Preparation: cut the stems to 4-5 centimeters and remove the fibrous parts. Remove the dark outer leaves. Cut them just above their thickest diameter to remove the tough leaf tips. Scrape out the hay inside with a teaspoon. Bend it up a little and place in a bowl with water and lemon juice so they do not discolor.
Cook in salted boiling water, split-cut artichokes for 15 minutes, whole artichokes for 30 minutes.
Artichokes with garlic and olive oil
Artischocken mit Knoblauch und Olivenöl / carciofi con aglio e olio d’oliva
Ingredients for 20 persons / Zutaten für 20 Personen
- 40 g big artichokes, prepared / große Artischocken, vorbereitet
- 20 cloves of garlic / Knoblauchzehen
- salt / Salz
- pepper / Pfeffer
Put the artichokes in a pot. Add a mixture of two parts olive oil and one part water until they are covered to 2/3. Add the garlic, salt and pepper, cover and cook at low temperature for 30 minutes.
